Rinse the feijão de corda. If using dried beans, soak in cold water for 4 hours and discard the soaking water. Place the beans in a pressure cooker, cover with water three finger-widths above the beans, and cook over high heat until the cooker reaches pressure; reduce to medium and cook for 12 to 15 minutes. Turn off the heat and let the pressure release naturally. The beans should be tender but whole. Reserve 2 1/2 cups of the cooking liquid.
In a regular pot, cook over medium heat for 35 to 50 minutes, topping up with hot water as needed.

Warm the manteiga de garrafa in a heavy-bottomed pot over medium heat. Sauté the onion for 3 to 4 minutes until translucent, then add the garlic for 30 seconds, just until fragrant.
The butter should scent the pot without browning too much.

Add the rice and stir for 1 to 2 minutes until the grains are coated with fat and lightly translucent. Add the drained feijão de corda, 2 1/4 cups of the reserved liquid, a pinch of salt, and black pepper.
Go easy on the salt: the queijo coalho will finish seasoning the dish.

When it comes to a boil, reduce to low heat, partially cover, and cook for 15 to 18 minutes, until the rice is tender and the liquid is almost absorbed. If it dries out before the rice cooks, add the remaining liquid gradually, keeping the mixture moist, never soupy.
The goal is creamy and cohesive, yet each grain still distinct.

Turn off the heat. Fold in half the queijo coalho, the cilantro, and the scallions; cover and rest for 5 minutes so the cheese softens without breaking down. Taste and adjust salt. Finish with the remaining cheese and serve the baião de dois hot.
For a golden crust, transfer a portion to a lightly greased nonstick skillet and cook over medium heat for 3 to 4 minutes before serving.
