Fill the lowball with ice and set aside for 2 minutes, just long enough to chill it. Keep the buriti pulp and rapadura syrup well chilled before you begin.
Cold preserves the batida's texture and keeps the ice from diluting it too quickly.

Add the white pot-still cachaça, buriti pulp, chilled rapadura syrup and 1 cup of ice to a blender. Blend for 15–20 seconds, until the ice is thoroughly crushed and the drink looks smooth and thick.
Do not blend for too long: the right texture is icy and velvety, never watery.

Taste. If the pulp is very tart or not sweet enough, add no more than 5 ml (1 tsp) of rapadura syrup and blend for 5 more seconds, only until combined.
Buriti has a strong character; adjust the sugar sparingly so its aroma remains at the center of the glass.

Discard the ice used to chill the glass. Strain the batida through a fine-mesh strainer over fresh ice and serve immediately, toasting the wetland palm groves of the Tocantins Cerrado.
Straining is optional, but it leaves the drink silkier when the pulp contains fibers.
